Vanilla Cupcakes..
They may be plain, but you just can't go by without having a least one good recipe of plain vanilla cupcakes. If you already have one, well, there's no such thing as too many vanilla cupcakes! Here's my favourite recipe.
Vanilla Cupcakes
*155g butter
*3 eggs
*1/4 cup of milk
*1 teaspoon vanilla extract
For Icing:
*1 1/2 cups icing sugar mixture
*125g butter
*2 tablespoons of milk (approx)
Method:
*Preheat oven to 180 degrees.
*Beat all ingredients until light and creamy.
*Divide mixture between patty cases and bake for approximately 15 minutes or until cooked when tested.
For Icing:
*Beat all ingredients until light and creamy. If the icing isn't runny enough, add a teaspoon more milk.
Check out my Superman cupcakes! To make these, all you need to do is spoon your icing into a piping bag with a large star nozzle (the thicker the icing the higher and fluffier your cupcake will look) and pipe the icing in circles around in a few circles. If your icing is too thin and you want really thick icing, or you just don't want to make your own icing, i would suggest ordering it from the cake and icing centre down on Samford Road in Mitchelton.
